The Roman fritto (literally “fried food”) is an extremely tasty dish, rich and never banal, which can be offered on many occasions. Raise your hand, for example, who has not eaten a nice misto fritto during these holidays! Not to be confused with fried cod, another Roman delicacy, here are the classic ingredients, bearing in mind that in every home there is a different variant and a small secret handed down from generation to generation:
- 2 potatoes
- 2 romanesco courgettes
- 2 Roman artichokes
- 100 g of lamb’s sweetbreads
- 100 g of lamb’s brains
- 100 g of mozzarella
- the juice of half a lemon
- 4 eggs
- 4 tablespoons of flour
- 1 tablespoon of wine vinegar
- 500 ml of extra virgin olive oil
- Salt and Pepper To Taste
To prepare the perfect misto fritto romano start with the brain and the sweetbreads from residues and filaments. Once cleaned, they will be boiled in water and vinegar for about 10 minutes. At this point get the heart from the artichokes, slice them and put them to soak in water, slightly acidulated with a few drops of lemon. Zucchini and potatoes should be peeled and cut into thick slices and the like. At the end of this passage we move on to the mozzarella, which should be sliced and dried. Then beat the eggs in a bowl together with a pinch of salt and a pinch of pepper. All the ingredients are then passed into the flour and then into the beaten egg. After that, prepare a pan with extra-virgin olive oil and fry all the ingredients taking care to turn them from time to time so as to obtain a uniform browning. When the cooking is complete, the various components of the fritto need to be drained on straw paper and served hot.
