  • 2 potatoes
  • 2 romanesco courgettes
  • 2 Roman artichokes
  • 100 g of lamb’s sweetbreads
  • 100 g of lamb’s brains
  • 100 g of mozzarella
  • the juice of half a lemon
  • 4 eggs
  • 4 tablespoons of flour
  • 1 tablespoon of wine vinegar
  • 500 ml of extra virgin olive oil
  • Salt and Pepper To Taste

Procedure:

To prepare the perfect misto fritto romano start with the brain and the sweetbreads from residues and filaments. Once cleaned, they will be boiled in water and vinegar for about 10 minutes. At this point get the heart from the artichokes, slice them and put them to soak in water, slightly acidulated with a few drops of lemon. Zucchini and potatoes should be peeled and cut into thick slices and the like. At the end of this passage we move on to the mozzarella, which should be sliced ​​and dried. Then beat the eggs in a bowl together with a pinch of salt and a pinch of pepper. All the ingredients are then passed into the flour and then into the beaten egg. After that, prepare a pan with extra-virgin olive oil and fry all the ingredients taking care to turn them from time to time so as to obtain a uniform browning. When the cooking is complete, the various components of the fritto need to be drained on straw paper and served hot.

Now don’t tell me that your mouth is not watering because I don’t believe you! Also because, at this point, you will have a tray full of all kinds of strictly fried delicacy. A nice Roman fry so it can be the backbone of dinners with friends, with relatives, for Christmas and New Year or even when you want to take a nice break from the diet…!
